Green Tea Sauce for Fish
(enough for two main-course portions of fish)
Ingredients:
- 1/3 cup brewed dark green tea, hot
- 3 tablespoons unsalted butter
- 1/4 teaspoon powdered dashi (Katsuo Dashi No Moto made by Shirakiku is one brand)
- a few drops dark sesame oil
Directions:
- Place the brewed green tea in a saucepan with sloping sides over medium-high heat. Add the butter all at once, and begin swirling with a whisk. Within a minute or so, the butter should melt, and the green tea sauce should be silky.

- Finish with a few drops of sesame oil, swirling them in. Serve immediately.
