Green Tea Sauce for Fish

(enough for two main-course portions of fish)

Ingredients:

  • 1/3 cup brewed dark green tea, hot
  • 3 tablespoons unsalted butter
  • 1/4 teaspoon powdered dashi (Katsuo Dashi No Moto made by Shirakiku is one brand)
  • a few drops dark sesame oil

Directions:

  1. Place the brewed green tea in a saucepan with sloping sides over medium-high heat. Add the butter all at once, and begin swirling with a whisk. Within a minute or so, the butter should melt, and the green tea sauce should be silky.
  2. Swirl in dashi powder, and taste for seasoning.
  3. Finish with a few drops of sesame oil, swirling them in. Serve immediately.
